Parwal and Potato Peel Bharta
Ingredients-
Peels of potato and parwal-1 cup each, Chopped onion- 1 large, Chopped garlic- 8 to 10 cloves, Chopped green chillies- 3 to 4, Black mustard seeds- 2 tsp, White mustard seeds- 1 tsp, Aniseed- 1 tsp, Dry red chilli- 2, Mustard oil- 4 tbsp, Turmeric powder- 1/2 tsp, Sugar-1/2 tsp, Salt- to taste.
Method-
Blanch both the peels with salt and turmeric powder. Keep aside.
Strain the water and blend the peels with green chillies, garlic and mustard seeds.
Heat mustard oil in a pan. Add aniseed and while dry red chillies , let it crackle.
Add onion to this and cook until it turns pink.
Add the peel paste to this and after adding salt, sugar fry till well done.
Lastly add more raw mustard oil on top of this and serve this with steam rice.
