Fish in Thai Red Curry Paste.
Ingredients-
Mackerel fish- 2 whole, Thai red curry paste- 4 tbsp, Coconut milk- 2 cup, Whole dry red chilli- 1 to 2 pcs, Mustard seeds-1/2 tsp, Curry leaves- 8 to 10, Vegetable oil- 2 tbsp, Salt- to taste, Water- if needed, Green chilli- for decorating, Kaffir lime zest, juice, leaves.
Method-
Heat a pan/kadhai and add vegetable oil to it. On heating up add mustard seeds, curry leaves, whole dry red chilli to it.
On crackling add red curry paste to it. Then add coconut milk, a little water (if needed) and salt to this.
Add the raw fish to this gravy and let it boil till well done.
Lastly, add kaffir lime juice, zest and leaves to this gravy. Put this off the flame.
Decorate this with green chillies and enjoy it with steam rice.
