Gandharaj Souffle
Ingredients
Savoy 300ml,Kaffir lime zest 10gm,chopped Kaffir leaves 10gm,Kaffir lime juice 25ml.
Savoy- eggs 4,sugar 175gm ,milk 200ml,whipping cream 375ml, geletin 20gm.
Method
Keep white portion,and yellow portion of eggs separately in two separate bowls.
Now in the yolk mix sugar and blend till turn into creamy texture.
Now boil the milk and pour it in the yolk mixture at the same time blend it well.
Take it in a double boiler vessel and boil it till turns thicker . In separate bowl take gelatine and mix it with water .
Now mix these two well and now mix white portion with cream and blend it turns in a fluffy texture . Now mix these two together.
Mix kaffir leaves ,juice and zest . Keep for sometime and then strain it.
Lastly serve it in the serving glasses and keep them in fridge for 8 to 10 hours ,serve cool and enjoy souffle.
