Recipe No. 8 Chicken in Greek Herb Sauce.
Recipe
Ingredients:
1. Chicken (Thigh piece) – 12
pcs.
2.Juice of 1 whole lemon
3.Olive oil- 60 ml
4.Salt & pepper
For Greek Herb Sauce:
1.Greek yoghurt- 500 ml
2.Spring onions- 10 sprigs
3.Green chilli- 1 pc
deseeded
4.Garlic- 1 clove peeled
5.Cucumber- ½ of one medium
sized peeled and finely chopped
6.Fresh coriander & mint
(chopped) – 3 tbsp
7.Salt & pepper- to taste.
Method:
1.Preheat the oven at 200
degree Celsius. Place the chicken thighs in a shallow roasting tin or oven
proof dish, then pour lemon juice and olive oil over it. Season it with little
salt and pepper.
2.When the oven’s up to heat
pop in the chicken and roast for 45 mins.
3.Meanwhile, get on with the
sauce. Tip the yoghurt into a large mixing bowl add spring onion and deseeded
chillies.
4.Now, to this add minced
garlic, diced cucumber and other fresh herbs. Mix them well.
5.Remove the chicken from
the oven and serve hot with the sauce. Garnish with the leftover fresh herbs.
