Recipe No.6: CHICKEN FALAFEL WITH COUSCOUS SALAD
INGREDIENTS:
1.MINCED CHICKEN- 450 GMS
2.SHALLOTS (FINELY CHOPPED)- 3 NOS.
3.CANNED CHICKPEAS (DRAINED AND RINSED)-125 GMS
4.FRESH ROOT GINGER (GRATED)- 1/2 TSP.
5.FRESH CORIANDER (CHOPPED)- 20 GMS
6.EGG - 1 NO.
7.OLIVE OIL- 3 TBSP.
8.TOMATOES (CHOPPED)-400 GMS
9.CASTOR SUGAR- 1 TSP.
10.SALT- TO TASTE
COUSCOUS SALAD:
- COUSCOUS- 200 GMS
- CHICKEN STOCK- 350 ML
- LEMON JUICE AND ZEST- 1 NO.
- PINE NUTS- 25 GM
- POMEGRANATE SEEDS- 1/2 PORTION
- EXTRA VIRGIN OLIVE OIL-3 TBSP
- FRESH PARSLEY (CHOPPED)- 2-3 TBSP
- FOR COUSCOUS SALAD, SOAK COUSCOUS IN HOT CHICKEN STOCK AND LEMON ZEST FOR 20 MINUTES. MEANWHILE,TOAST THE PINE NUTS ,POMEGRANATE SEEDS, TILL GOLDEN. USING A FORK FLUFF THE COUSCOUS AND STIR IN PINE NUTS,POMEGRANATE SEEDS,LEMON JUICE ,OLIVE OIL AND PARSLEY TO THIS MIXTURE.
- FOR FALAFEL, PUT THE CHICKEN MINCE INTO A FOOD PROCESSOR.ADD CHOPPED SHALLOTS,CHICKPEAS,GRATED GINGER AND SALT, MIX THEM NICELY.TO THIS ADD CORIANDER ,EGG AND WHIZ AGAIN BRIEFLY; SHAPE THIS INTO 12 BALLS OF 6.5 CM (APPROX.)
- HEAT OLIVE OIL IN A FRYING PAN, FRY THESE PATTIES FOR 2-3 MINUTES ON EACH SIDE UNTIL GOLDEN BROWN
- MEANWHILE,FRY THE REMAINING SHALLOTS IN A PAN WITH REMAINING OIL. STIR IN TOMATOES,SUGAR AND SIMMER FOR 10 MINUTES OR UNTIL SLIGHTLY THICKENED
- SERVE,THE FALAFEL WITH COUCOUS SALAD AND SAUCE .
